What’s the difference between sharpening and chamfering?

Some people may find the question a bit silly, but it’s important to be clear about that too!

Buffing and sharpening are two different processes that can be carried out to keep knives sharp. There are important differences between them!

1. Fenés

The purpose of the butt is to restore the cutting edge of the knife without removing a significant amount of material from the edge. So, if you look at your knife from the front and focus on the edge, you will see an angle that is isosceles (if you sharpened accurately). For a kitchen knife, we recommend an angle between 30-35 degrees. During a spanking, this triangle will be “sharpened back”

When do we need to sharpen our knives?

The edge of the knife can be bent or dulled on a microscopic level during use. The butt can correct this curvature for a period of time.

Tools: you can also use a fenestone, fenestone steel or ceramic fenestone.

How often should we go out?

It can be done more frequently, even daily, as only a fine adjustment of the edge is made with minimal loss of material. However, it is not a substitute for knife sharpening. This is described below.

2. Sharpening

Sharpening is used to resharpen the edge of the knife when the edge is so dull that sharpening is not effective enough. It involves the actual removal of material from the cutting edge of the knife to create a new, sharp edge. It is always advisable to draw your knives to the same edge angle according to function. E.g.: We sharpen all our kitchen knives to 32 degrees, and our knives to 42 degrees.

When is sharpening necessary?

If the knife is so dull that sharpening does not improve its performance, sharpening is needed. This can happen after prolonged use when the edge becomes worn or damaged.

How often do we sharpen our knives?

Less often, depending on how often and how intensively you use the knife, it can be every 1-2 weeks or 1-2 months. In summary

A fine adjustment is made to the cutting edge to restore sharpness, while sharpening is done when the edge is more severely dulled and material removal is required to restore sharpness.
