Q: Is there a difference in edge quality if an additional finer stone or ribbon is added to the process before the final leather peel?

A: The grain fineness of stones and strips is marked with different units, so it is not always easy to compare them. However, based on our practical experience, there is no significant functional difference between grinding a knife to a grain fineness of P2000 and grinding only to P400. In some applications (such as the meat industry), a slightly more serrated edge can be particularly beneficial. Most users who don’t work with knives for 4+ hours a day probably wouldn’t feel much difference. If someone wants to cut a hair in half, then it may be worth using finer grit, but the knife itself will greatly affect the feasibility of the aforementioned attraction.

Q: Which tapes should I order for different types of steel, such as Böhler N690, M390, Damasteel DS93X Odin, Sleipner and Niolox?

A: Generally speaking, blue zirconia tape (zirconia tape) is suitable for edge grinding all types of steel, even those with a hardness of 62+ HRC. However, for ceramic knives, silicon carbide tapes are required.

For pressure cuts it is useful to have a finer edge band, whereas for pull cuts this can be a disadvantage. You could also de-grade with leather tape after P120, the blade cuts the paper smoothly, but it is time consuming to de-grade straight after P120, so that is why we also fine the edge to make de-grading easier.
