How does the Edge-On-Up meter work?
The Edge-On-Up sharpness meter scientifically measures the sharpness of your knives. The holder contains certified synthetic wire. Gently press the knife to this wire. The scale below the holder measures the pressure applied until the wire is cut. This is the result of the test. The pressure in grams is the C-scale value of the BESS (Brubacher Edge Sharpness Scale). This BESS value is the final test result. The sharper the knife, the less weight it needs, the lower the BESS value. A lower score is therefore sharper than a higher score. As such, the sharpness of the knife has a scientific value. Never again will you have to guess or insist on the term “razor sharp”. Namely, there is a specific numerical value that allows you to compare sharpness.
