What does the BESS value mean?
The BESS value is the maximum weight you need to
to push the knife through a certified test medium. The sharper the knife, the less weight you need.
A lower score is therefore sharper than a higher score.
Since all tests are performed with the same test medium, you can easily compare the results.
The BESS scale
Since a number doesn’t say much without context, we’ve put together a table to see how your score compares to the full scale. Starting with BESS 2000, you have to cut through the test medium with a blunt knife, all the way to point 0: ultimate sharpness. It’s true: there are few knives that come close to 0 BESS. A double sided razor is about 50 BESS to give you a better idea.

With BESS, everyone can test the sharpness of the knife. Edge-On-Up test tools are relatively affordable. Therefore, you no longer need half a laboratory to get reliable results. As long as everyone uses certified equipment and certified test media. As such, it measures the sharpness of the knife like other users in the world. Comparing the results is so easy! BESS also provides clarity. Abstract terms like “razor sharp” or “incredibly sharp” are replaced by a value. But “rather dull” also suddenly takes on a value that can be compared to other values.
